It is common sense that people all around the world would like to try Chinese food and they have heard that Chinese food is really one kind that is worth tasting. However, there are not many people that know about the Chinese medicinal cuisine which can be regarded as a part of traditional Chinese medicine. Chinese medicinal cuisine, also called Chinese food therapy, is a kind of dieting that originates from China and it has shown Chinese people’s understandings of the effects of food on the human organism as well as their concept of eating in moderation (BusinessWorld. 2005). Or maybe it can be put in another way that Chinese medicinal cuisine is an ancient healing art that can be explored in order for the health of the great majority of people all over the world.

Just take the children soup (see in fig.1) as an example, Chinese people like to drink plenty of hot soup in cold winter days either for keeping them warm or helping themselves stay healthy. And Chinese people will try to make soups with high yang herbs and vegetables and also add meat to balance the dish at the same time so that the soup can be able to bring the greatest benefit toward human beings in the due time. Chicken soup tends to be one of the favorite winter soups for people to choose, like Westerners. Moreover, people in many countries will choose to drink chicken soup when they are sick and they deem that the chicken soup can help them return back to be healthy again. Therefore I begin to be interested in the culture behind chicken soup and that is why I would like to research about Chinese medicinal cuisine. Therefore, the following will elaborate on Chinese medicinal cuisine, during which several major aspects about it will be referred to. It is hoped that it can help people know more about Chinese medicinal cuisine so that they can make the value of it to the full play in the end.

First and foremost, comes the history of Chinese medicinal cuisine. To put it more specifically, Chinese medicinal cuisine can be dated back to the early Han Dynasty era (206 BC -220 AD) and it is recorded in the Huangdi Neijing (The Yellow Emperor’s Classic of Internal Medicine) (Gavin Van Hinsbergh. 2015). From this, a fair knowledge can be obtained that Chinese medicinal cuisine really has a long history and it has been tried for a long period of time. Apart from Huangdi Neijing, there are as well various ancient Chinese medical books that have given the introduction about hundreds of animal, chemical and plant ingredients together with their exclusive effects on the human body, contributing to people’s using all the ingredients in a proper way. What is a must to mention is that Chinese medicinal dishes are always cooked with taking how the human body operates into consideration so that the dishes can take effect for human body in the due time. So a fair knowledge can be obtained that the function of every kind of grain, herb, meat and vegetable on human body will also be involved if Chinese medicinal cuisine would like to keep people healthy and help them cure disease (Gavin Van Hinsbergh. 2015). Moreover, it has been recorded that Chinese medicinal cuisine is better to be cooked with slow cooking methods in order to preserve the nutrition of the medicinal food to the greatest degree.

With the history of Chinese medicinal cuisine being stated at length in the above, what follow are the general principles of Chinese medicinal cuisine. Detailed speaking, there are four general principles of Chinese medicinal cuisine which can be summarized as the below ones: balance, adding medicinal herbs, using heats and flavors together with mealtime TCM principles (Gavin Van Hinsbergh. 2015). When it comes to the third principle using heats and flavors, it emphasized that people have to consume all the flavors in a certain meal and balance their “heat” at the same time. And as to the last principle mealtime TCM principles, what is a must to point out is that people still has to pay attention to the Chinese customs related with eating meals when they consume Chinese medicinal cuisine because those customs have been significant part of the Chinese culture over years. TCM in mealtime TCM principles means traditional Chinese medicine and the primary mealtime TCM principles can be divided into the below ones: always make sure the vegetables are cooked; chew the food well; do not skip meals; eat slowly; eat seasonal fruits and vegetables; pay attention to the tastes of the food and get rid of other distractions while eating; sit down to eat quietly; take a nap or rest for a while after lunch; try to avoid overly processed food; etc (Gavin Van Hinsbergh. 2015). For instance, eating slowly is believed to be beneficial toward people’s health to a certain extent.

Last but not the least comes why Chinese people choose to consume Chinese medicinal cuisine. Just as what has been mentioned by Sun Simiao, a doctor in Tang Dynasty, that “Food has the function of eliminating evil influences and soothing the vital organs, cultivating one’s mind and building up one’s strength” (SeeChina. 2009), which has clearly shown that Chinese medicinal cuisine can benefit people in various aspects. And it is ingrained in Chinese people’s mind that food tonic is a preference when compared with medicine tonic so that they would hold that Chinese medicinal cuisine is a wise selection for them for the sake of their health. But what can not be neglected is that different people have to select different herbs based on the different physical status and it is better to follow the doctor’s prescription when taking Chinese medicinal cuisine (SeeChina. 2009). Only in this way can people really stay healthy and get themselves rid of the sufferings from diseases with the help of Chinese medicinal cuisine.

I have interviewed my grandma as for why Chinese people choose to consume Chinese medicinal cuisine the other day and she said that it was handed down from her mother. She called back upon the days when she was a little girl that it was poor for them to cook chicken soup or duck soup at that time. As a result, their family chose to go into the hills to gather herbs themselves and cook the herbs together with the available vegetables. According to her, the Chinese medicinal cuisine at her time was kind of simple and they could not afford the exquisite medicinal cuisine as today. So a fair knowledge can be obtained that Chinese medicinal cuisine has improved in one way or another as time went by and today’s Chinese medicinal cuisine has been refined step by step. It can be predicted that Chinese medicinal cuisine will be with higher requirements toward people’s health in approaching days and more and more Chinese medicinal cuisine recipes will be put forward in the future. She also added that different seasons should be with different recipes so that the cuisines can help people live longer and the different recipes for different reasons should be dealt with different measures on yin and yang. The below duck soup (see in fig.2) is the most appropriate for summer in that it can help dispel summer heat so that people won’t be too hot in summer.

Concerning the consumption of Chinese medicinal cuisine, Richard R. Wertz has proposed that Chinese medicinal cuisine is particularly popular among Cantonese people that are used to slow-cooked soups (Richard R. Wertz. 1998-2016). So a fair knowledge can be obtained that they can be accustomed to Chinese medicinal cuisine quite well in that such cuisine is also cooked through slow cooking methods, which has been explained in the above by Gavin Van Hinsbergh. In addition, it is added that Chinese medicinal cuisine are not limited within the people of China but it has extended to those ones from Southeast Asia. It is betted that such cuisine can be fast spread to more and more countries in approaching days.

It can be found that there are really a lot to be explored about Chinese medicinal cuisine and there are still many other aspects about it which have not been described in the above, which calls for further work. Only when people can know clearly about Chinese medicinal cuisine can they be able to make the value of Chinese medicinal cuisine to a full play in the due time. What can not be neglected is that people must lay emphasis on balancing yin and yang when they cook Chinese medicinal cuisines so that the cuisines can be able to fit in well with the human body all the time. If people can find some ways to make their own unique medicinal cuisines, it would be ok as long as they can fit in the balance of yin and yang.
